Question about carbs and jets.

I rebuilt the carbs about a month ago, and the bike is running good.  I just remembered that when I put in the jets that I seated them all down as far as they would go.  And now I vaugely remember that some of the jets are supposed to be backed out so many turns from seated.

Am I remembering this right, and if they do need to be backed out a bit how much for each jet?  Where would I find this information?

The jets (main, pilot air & pilot fuel) get seated, pilot mixture screws though should never be seated hard. they are to be adjusted.
